BLACK EYED PEA SALSA
Ingredients
15 oz can
black eyed peas, rinse and drained
1 medium
red pepper, finely diced
2 T onion,
(green or white) finely minced
1 T
parsley flakes
1 T
cilantro chopped
1 tsp
chopped jalapeno chilies
2 T oil
2 T red
wine vinegar
Salt and
pepper to taste
Directions
Mix
ingredients together
Cover and
marinate overnight
Serve
with tortilla chips
