WHITE CHILI


Ingredients


1 T corn oil
1 onion, chopped
1 clove garlic, minced
1 tsp cumin
2 large whole chicken breasts
skinned and cooked
1 15-ounce can garbanzo beans, drained
1 15-ounce can white beans, drained
1 12-ounce can white corn, drained
2 4-ounce cans chopped green chilies
2 chicken bouillon cubes
1 ½ C boiling water
Cholula
1 cup shredded Monterey jack cheese
Avocado
Tortilla chips


Directions

Over medium heat cook onion, garlic, and cumin in the corn oil
Mince, chop or tear chicken breasts and when onion and garlic are tender, stir in chicken

Add beans, corn and chilies - Stir all to blend
Combine chicken bouillon with the 1 1/2 cups of boiling water, and stir through chili
Cover and let chili cook over low heat for about 30 minutes

Just before serving, add Cholula to taste and sprinkle cheese & sliced avocado over the top.   Crumble tortilla chips and sprinkle on top

quick tip: mesh produce bag


Use the plastic mesh bag that your onions or oranges came in as a no-scratch scrubber for a grimy pot or pan. Ball up the bag, scour away the grime, and throw the whole mess away.

TACO SALAD


Ingredients


1½ head iceberg lettuce
½ lb ground beef, sauté & drain well
1 C shredded cheddar cheese
1 can light kidney beans, rinsed and drained
1 can sweet corn, rinsed and drained 
½ C onion, chopped
2 avocados, chopped (optional)
1 green pepper, chopped or sliced
Grape Tomatoes, halved
1 can sliced black olives, rinsed and drained
1 T jalapeno green sauce
1 bottle Italian Good Seasons dressing
1 bag tortilla chips or Frito chips (broken)


Directions

Prepare lettuce for salad and toss with next 7 ingredients

Just before serving, mix green sauce with dressing and toss with lettuce mixture, and chips

Do you drink your soft drinks out of a can?  Make more closet space! Expand your clothing capacity by repurposing a soda-can tab: Slip one end over a hanger’s hook, then suspend a second hanger from the tab’s other end.

SPINACH WITH CAVATAPPI

Sooooo unbelievably easy and soooo unbelievably addictive

 

Ingredients

8 C fresh spinach, chopped
6 oz Cavatappi pasta, cooked
2 T olive oil
¼ tsp salt
¼ tsp white pepper
19 oz cannellini beans, drained
2 cloves garlic, minced
½ C Asiago Cheese


Directions

Toss ingredients together
May be stored for up to 3 days

Serve with a garnish of shredded cheese

quick tip: clear nail polish


I used to use clear nail polish to stop a run in a pair of stockings... but who wears stockings anymore? So, how about this one... Button hanging by a thread? Avoid this by coating a button's center with a drop of clear nail polish. Once it's dry, it will prevent the stitches from fraying over time.

DRESSING FOR A SPINACH SALAD


Ingredients


1/3 C oil
2 T tarragon wine vinegar
1 T Dijon mustard
1 tsp minced shallots
1 tsp sugar
¼ tsp salt

Directions

Mix in blender until smooth



My Spinach Salad consists of:
Fresh Clean Spinach
Sliced Onions
Sliced Hard Boiled Eggs
Cooked and crumbled bacon
Homemade Croutons

Salad with Warm Goat Cheese


Ingredients for Warm Goat Cheese


11 oz log plain or herbed goat cheese
2 extra-large egg whites, beaten with 1T water
Fresh white bread crumbs (make fresh in food processor)
Olive oil & unsalted butter

Ingredients for Dressing

2T good cider vinegar
2T good Champagne vinegar (it does make a difference)
Pinch sugar
½ tsp kosher salt
¼ tsp freshly ground black pepper
1 extra-large egg yolk
1 C good olive oil

Enough mixed salad greens for 6 servings


Directions

Slice the cheese into 12 (1/2-inch-thick) slices.
(The easiest way to slice goat cheese is to use a length of dental floss.)
Dip each slice into the beaten egg whites, then the bread crumbs, being sure the cheese is thoroughly coated.
Place the slices on a rack and chill them for at least 15 minutes.

For the dressing, place the vinegars, sugar, salt, pepper, and egg yolk in the bowl of a food processor fitted with a steel blade (or blender) and blend for 1 minute.

With the motor running, slowly pour the olive oil through the feed tube until the vinaigrette is thickened. Season, to taste.

Toss the salad greens with enough dressing to moisten, and then divide them among 6 plates.

Melt 1T oil and 1T butter in a sauté pan over medium-high heat until just under smoking.
Cook the goat cheese rounds quickly on both sides until browned on the outside but not melted inside.


Top each salad with 2 warm rounds and serve.

quick tip: a plastic bottle



I have seen this done before and it always fascinates me.

Separate eggs — without the mess
Crack an egg into a bowl. 
Squeeze a clean water bottle and hold it over the yolk.
Loosen your grip to vacuum the yolk up into the bottle.
Compress the bottle once more and release the egg into another bowl.

Homemade Salad Dressing




Ingredients

Place the following ingredients in an empty bottle
1 Cup salad oil
1/2 Cup sugar
1/3 Cup catsup
1/4 Cup Vinegar
1 T. Worcestershire sauce


Directions

Shake well every time before using.

This is so simple; I can't believe I didn't think of it sooner!
For a tough-to-fasten bracelet: Unfold clip into an S; hook one end through the jump ring and hold the other end. Then bring the clasp around to latch.

Veterans Day is an official United States holiday that honors people who have served in the U.S. Armed Forces, also known as veterans. It is a federal holiday that is observed on November 11. It coincides with other holidays such as Armistice Day and Remembrance Day, which are celebrated in other parts of the world and also mark the anniversary of the end of World War I. (Major hostilities of World War I were formally ended at the 11th hour of the 11th day of the 11th month of 1918, when the Armistice with Germany went into effect.)

Veterans Day is not to be confused with Memorial Day; Veterans Day celebrates the service of all U.S. military veterans, while Memorial Day is a day of remembering the men and women who died while serving.

Thank you, thank you to all those who have served.
