POTATO SALAD



Ingredients – Salad

5 lb potatoes, diced
1 large onion
6 stalks celery
4 hard boiled eggs



Directions

Boil potatoes until tender
Cool
Chop remaining ingredients
Toss

(Have you ever added avocado to your potato salad?)

Ingredients - Dressing:
I multiply this by two (I like lots of dressing on it)

1½ C mayonnaise
2 T sugar
½ tsp celery seed
¼ C milk
1 T mustard
½ tsp basil
Salt and pepper to taste

Directions

Mix ingredients and pour over potato mixture (may need to add a ½ C or more of milk if potatoes are still warm… they will absorb the dressing quickly)
